Sparkling Easter Eggs

Ingredients

3 cups shredded unsweetened coconut

1 1/2 cups pecan pieces

2 3-ounce packages peach-flavored gelatin

1 14-ounce can sweetened condensed milk

Sanding sugar*
Directions
1.
In the work bowl of a food processor, combine coconut and pecan pieces. Pulse until fine. Pour mixture into a large bowl. Add gelatin and condensed milk, stirring until combined.

Roll mixture into 1-inch balls. Roll balls in assorted colors of sanding sugar to coat.
Note:
*Sanding sugar is a fine granulated sugar used to decorate baked goods and candies. It is available in a variety of colors from cake decorating suppliers.
