Southwest Turkey Bake

Ingredients
2 tablespoons butter
1 (6.8-ounce) package Rice a Roni Spanish Rice
1 small onion, chopped
1 (14-ounce) can diced tomatoes
1 (4.5-ounce) can chopped green chiles
2 cups water
3 cups chopped cooked turkey
1 (10.75-ounce) can cream of chicken soup
1 pint sour cream
2 teaspoons cumin
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 cups shredded Colby-Jack cheese blend
1 cup crushed tortilla chips
Directions
1. Preheat oven to 350 degrees.
2. In a large saucepan over medium-high heat, melt butter. Add rice and onion; cook for 4 to 6 minutes or until rice is browned, stirring constantly. Add seasoning packet, tomatoes, chiles, and water. Bring to a boil. Cover, reduce heat, and cook until liquid is absorbed and rice is tender, approximately 20 minutes. Add turkey, soup, sour cream, cumin, salt, and pepper; stir.
3. Spoon mixture into a lightly greased 13-x-9-x-2-inch baking dish. Top with shredded cheese and crushed tortilla chips.
4. Bake for 30 to 40 minutes, or until bubbly.
