Sorbet-Melon Parfaits
This so-easy summer cooler is the ideal addition to a collection of low-calorie dessert recipes. Top melon balls with sorbet and a splash of sparkling wine.

Ingredients

3/4 cup chilled, seeded watermelon balls

3/4 cup chilled, seeded cantaloupe melon balls

3/4 cup chilled, seeded honeydew melon balls

1 cup lemon or mango sorbet

1/2 cup sweet sparkling wine, chilled

Mint sprigs (optional)
Directions
1.
Arrange melon balls among four wine glasses or goblets. Scoop about 1/4 cup sorbet atop melon. Pour about 2 tablespoons sparkling wine over sorbet and melon. If desired, garnish with mint sprigs. Serve immediately. Makes 4 servings.
