Beans are the base for this cheap easy appetizer livened up with garlic and curry powder. Use squash slices for dipping.

  • 1  16-oz. can  butter beans or 1 15.5-ounce. can cannellini beans, rinsed and drainedOn Sale
  • 1/2  cup  walnuts or pecans, toastedOn Sale
  • 1/2  cup  extra virgin olive oilOn Sale
  • 3  Tbsp.  lemon juiceOn Sale
  • 3  cloves  garlic, mincedOn Sale
  • 1  small  yellow summer squash or zucchini, cut diagonally into slicesOn Sale
  • 2  Tbsp.  extra virgin olive oilOn Sale
  •     Curry powderOn Sale
  •     Sea salt or kosher saltOn Sale

Directions
1.
In a small skillet cook curry powder in 1 tablespoon hot olive oil until fragrant.

In a food processor combine curry powder mixture, beans, walnuts, 1/2 cup olive oil, lemon juice, and garlic. Cover and process until almost smooth, scraping down sides as needed.
3.
Preheat broiler. Brush summer squash slices with 2 tablespoons olive oil. Broil for 2 minutes, or until softened, turning once.
4.
Serve bean mixture atop summer squash slices. Sprinkle with additional curry powder and sea salt. Makes 8 appetizer servings.
