Skillet Cornbread

Ingredients

  • 2 cups plain yellow cornmeal
  • 1 cup all-purpose flour
  • 4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 teaspoon sugar
  • 1 large egg, beaten
  • 1 1/2 cups milk
  • 2 - 3 tablespoons bacon grease or shortening
Directions
1. 
Preheat oven to 425 degrees F.
2. 
In a large mixing bowl, combine cornmeal, flour, baking powder, salt, and sugar. Add egg and milk and mix well, but do not beat.
3. 
In a 9-inch skillet, preferably cast iron, heat bacon grease or shortening over medium-high heat until almost smoking. Pour in batter and cook for 2 to 3 minutes, or until the edges begin to turn golden.
4. 
Place skillet in oven and bake for 30 minutes, or until golden brown.
5. 
Let cool for a few minutes before slicing.
