  • 1 pound ripe tomatoes, slice in wedges, juices reserved
  • 2 tablespoons chopped parsley leaves
  • 1 tablespoon extra-virgin olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
Combine tomatoes and reserved juice, parsley, and oil in a mixing bowl.
Gently toss, season with salt and pepper and serve.
