Simple Spinach Salad

Baby spinach is really a convenience product. There is no need to remove its tender stems like you must with "grownup" spinach. This light and lovely three-ingredient dressing is all that healthful greens such as baby spinach need.

Ingredients

  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 - 2 teaspoons honey
  • 4 cups baby spinach
Directions
1. 
In a large bowl whisk together the lemon juice, olive oil, and honey. Add spinach tossing to coat. Season with salt and pepper. Makes 4 servings.
