Shrimp-Fruit Gazpacho

  • 2  medium  fresh jalapeno peppers, seeded and finely choppedOn Sale
  • 2  tablespoons  lime juiceOn Sale
  • 2  tablespoons  tequila (optional)On Sale
  • 1  clove  garlic, mincedOn Sale
  • 1  teaspoon  sugarOn Sale
  •   Several dashes  bottled hot pepper sauceOn Sale
  • 1  8-ounce package  frozen, peeled, cooked shrimp, thawed and choppedOn Sale

Directions

In a large mixing bowl stir together the tomatoes, tomato juice, broth, peaches, cucumber, green onions, cilantro, jalapeno peppers, lime juice, tequila (if desired), garlic, sugar, and bottled hot pepper sauce. Cover and chill mixture for 2 to 24 hours.

Just before serving, stir in shrimp. If desired, garnish with a cilantro sprig and a few additional cooked shrimp threaded onto a bamboo skewer. Makes 4 to 6 servings.
