Shrimp-Fruit Gazpacho
This gazpacho (gahz-PAH-choh) recipe has sweet shrimp and fragrant peaches or nectarines--a flavor twist on a summertime favorite.

Makes 4 to 6 servings.
Ingredients

2 cups chopped, peeled tomatoes

2 cups tomato juice

1 cup beef broth or vegetable broth

2 medium peaches or nectarines, peeled and chopped (1-1/2 cups)

1/2 cup chopped, seeded cucumber

1/4 cup sliced green onions
-
1/4 cup snipped fresh cilantro

2 medium fresh jalapeno peppers, seeded and finely chopped

2 tablespoons lime juice
-
2 tablespoons tequila (optional)

1 clove garlic, minced

1 teaspoon sugar

Several dashes bottled hot pepper sauce

1 8-ounce package frozen, peeled, cooked shrimp, thawed and chopped
Directions

In a large mixing bowl stir together the tomatoes, tomato juice, broth, peaches, cucumber, green onions, cilantro, jalapeno peppers, lime juice, tequila (if desired), garlic, sugar, and bottled hot pepper sauce. Cover and chill mixture for 2 to 24 hours.

Just before serving, stir in shrimp. If desired, garnish with a cilantro sprig and a few additional cooked shrimp threaded onto a bamboo skewer. Makes 4 to 6 servings.
