Shrimp & Bean Couscous

Whole wheat couscous is tossed with black beans, corn, and shrimp to make this recipe a complete meal in minutes.

Ingredients

1 cupwhole-wheat couscoussee savings

1-1/4 cupsreduced-sodium chicken brothsee savings

1 tablespoonolive oilsee savings

1red pepper, seeded and slicedsee savings

-
1 poundpeeled and deveined medium shrimp, tails removedsee savings

-
1 can (15 ounces)black beans, rinsed and drainedsee savings

-
1 can (11 ounces)corn, drainedsee savings

-
1/4 cupItalian vinaigrettesee savings

-
1/4 cupfresh basil, finely shreddedsee savings

Directions
1.
In a medium saucepan, cook couscous according to package directions, using broth instead of water. Set aside.
2.
In a large skillet, heat oil over medium-high heat. Add pepper and cook 5 minutes. Stir in shrimp and saute 3 minutes or until shrimp are opaque throughout. Stir in black beans and corn; cook just to heat through. In a large bowl, toss together couscous and shrimp-and-bean mixture with vinaigrette and basil.
