Shrimp and Shiitake Mushroom Pizza Squares

Ingredients

1 16-ounce loaf frozen bread dough, thawed

1 egg white

1 tablespoon water

1/4 cup toasted pine nuts or slivered almonds

Parmesan Pizza Sauce (see Recipe Center)

1 cup chopped fresh spinach

1/2 pound fresh or frozen peeled and deveined shrimp, cooked and halved lengthwise

1 cup sliced fresh shiitake or white mushrooms

1 cup shredded Swiss cheese (4 ounces)
Directions

On a lightly floured surface, roll bread dough into a 14x10-inch rectangle. Transfer dough to a lightly greased large baking sheet. Build up edges slightly; score edges with a knife, if desired. Prick generously with a fork. Combine egg white and water; brush over dough. Bake in a 375 degree F oven for 20 to 25 minutes or until light brown.

Stir pine nuts or almonds into Parmesan Pizza Sauce; spread over hot crust. Top with spinach, shrimp, and mushrooms. Sprinkle with Swiss cheese.

Bake about 12 minutes more or until cheese melts and pizza is heated through. Makes 12 appetizer servings.
