Shortcake Muffins

Ingredients

1 1/2 cups cake flour

1 teaspoon baking powder

1/4 teaspoon salt

3/4 cup sugar
-
6 tablespoons butter, at room temperature

3 large egg yolks
-
1/2 cup whole milk
-
2 teaspoons vanilla extract
Directions
1.
Preheat oven to 350 degrees. Grease a 6-cup shortcake or muffin pan; set aside.

In a large bowl, sift together flour, baking powder, and salt; set aside.

In another bowl, beat butter and sugar together at medium speed with an electric mixer for 3 minutes, or until creamy. Add yolks, one at a time, beating well after each addition.
4.
Add dry ingredients in 3 additions, alternating with milk, ending with flour. Beat at low speed until well combined. Scrape down sides of bowl. Add vanilla and beat for 10 seconds. Pour batter into prepared pan.
5.
Bake for 15 minutes, or until a wooden pick inserted into center of cakes comes out clean.
