Sesame Tofu Stir Fry

Stir-frying is a popular vegetarian form of cooking. This recipe throws together rice, tofu, and vegetables for a meal that can be prepared in 30 minutes.

Ingredients

1/4 cupfinely chopped peanutssee savings

1 tablespoonsesame seedssee savings

1 teaspoongrated fresh ginger or 1/2 teaspoon ground gingersee savings

1/8 teaspooncrushed red peppersee savings

1 12-ounce packagefirm or extra-firm tub-style tofu (fresh bean curd), drained and cut into 1/2-inch cubessee savings

1 tablespooncooking oilsee savings

1 16-oz. bagfrozen stir-fry vegetables, thawedsee savings

2/3 cupbottled stir-fry saucesee savings

2 cupshot cooked ricesee savings

2green onions, thinly sliced (1/4 cup)see savings

-
1 mediumorange, cut into 8 wedgessee savings

Directions
1.
In a bowl combine 1 tablespoon of the peanuts, the sesame seeds, ginger, and red pepper. Add tofu; toss gently to coat.

Heat oil in a large skillet over medium-high heat. (If necessary, add more oil during cooking.) Add tofu mixture to skillet. Cook, stirring gently, for 3 to 4 minutes until sesame seeds are toasted and tofu begins to brown.

Remove tofu mixture to a bowl. Add vegetables to skillet; cook and stir for 2 to 3 minutes or until heated through. Add stir-fry sauce; cook and stir gently until mixture is bubbly. Stir in tofu; heat through. Serve over rice. Sprinkle each serving with some of the remaining 3 tablespoons peanuts and the green onions. Serve with orange wedges.
