  • 1 Pound
    large scallops, rinsed and patted dry

    salt

  • 1/2 Teaspoon
    cayenne pepper

  • 3 Tablespoons
    unsalted butter

  • garlic cloves, pushed through a press

  • green onions(white part only), chopped

  • 1 Tablespoon
    chopped thyme or 1 teaspoon of dried thyme

  • 1 1/2 Tablespoons
    lemon juice

  • 1 Teaspoon
    lemon zest

Directions
1.
Sprinkle scallops with salt and cayenne.
2.
Heat butter in a large skillet over medium-high heat until it bubbles and begins to brown. Add garlic and green onions; cook, stirring, 1 minute.
3.
Add scallops, thyme, and lemon peel to skillet. Saute scallops 2-3 minutes per side, until lightly colored and cooked through.
4.
Drizzle with lemon juice and serve immediately.
