Sauteed Zucchini for Quesadillas

This seasoned zucchini is meant as a filler for quesadillas but is also delicious on pasta or served as a side dish.

Ingredients

2 tablespoonsextra-virgin olive oilsee savings

1-1/2 poundszucchini, quartered lengthwise and then crosswise into 1/4-inch-thick slicessee savings

3/4 teaspoondried oregano, crumbledsee savings

Directions
1.
Heat 1 tablespoon oil in a large nonstick skillet over moderately high heat until hot but not smoking and saute half of the zucchini with half of oregano, stirring until just tender, about 3 minutes.

Repeat with remaining oil zucchini, and oregano. Transfer to a bowl and season with salt and pepper to taste. Let cool to room temperature. Serve or keep chilled covered. Makes about 3 cups.
