Sauteed Chicken Sausages with Red Bell Peppers

  • 8 Teaspoons
    extra-virgin olive oil, divided

    chicken sausages (8 sausages)

  • red onion, thinly sliced

  • 1 Teaspoon
    dried thyme

  • medium cloves garlic, finely chopped

  • medium red bell pepper, seeded, stemmed, ribs removed, and cut into strips

  • 1 Cup
    chopped Italian (flat leaf) parsley

  • 1/8 Teaspoon
    salt

  • 1/8 Teaspoon
    freshly ground black pepper

Directions
1.
Heat 2 teaspoons olive oil in a large skillet over medium-high heat. Add sausages and brown on all sides, turning frequently, about 5 minutes.

Meanwhile, heat remaining 2 tablespoons oil in a medium skillet over medium-low heat. Add onion and cook, stirring occasionally for 5-6 minutes until soft. Add thyme and garlic and cook 1 minute more. Stir in bell pepper and cook 10 minutes, stirring occasionally, until peppers just begin to soften.

Add onion and pepper mixture to sausages; add parsley and salt and black pepper. Cook 10 minutes more.
