Directions
1.
Heat 2 teaspoons olive oil in a large skillet over medium-high heat. Add sausages and brown on all sides, turning frequently, about 5 minutes.

Meanwhile, heat remaining 2 tablespoons oil in a medium skillet over medium-low heat. Add onion and cook, stirring occasionally for 5-6 minutes until soft. Add thyme and garlic and cook 1 minute more. Stir in bell pepper and cook 10 minutes, stirring occasionally, until peppers just begin to soften.
3.
Add onion and pepper mixture to sausages; add parsley and salt and black pepper. Cook 10 minutes more.
