    Smithfield Smoked Sausage Links, halved lengthwise

    olive oil

    onion, sliced

    green bell pepper, sliced

    red bell pepper, sliced

    Italian sub rolls, split

  • 1/2  cup
    mayonnaise

    garlic cloves, finely minced

  • 1  tablespoon
    fresh minced parsley

Directions
1.
Heat olive oil in a skillet over medium heat. Saute onions and peppers, tossing often until the vegetables are soft. Add sausage and cook until browned.
2.
In a small mixing bowl combine mayonnaise, garlic, and parsley. Spread onto both sides of the rolls.
3.
Using tongs, transfer 2 pieces of sausage and some onions and peppers onto each roll.

Serving Suggestions
Serve with a side salad or your favorite potato chips.
