Saucy One-Pan Ravioli

Purchased ravioli makes this an easy pasta meal to serve any day of the week.

  • 2 cups cherry tomatoes
  • 1 clove garlic
  • 3/4 cup chicken broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 9 ounce package refrigerated ravioli
  • 2 tablespoons snipped fresh basil
  • 1 tablespoon snipped fresh Italian parsley
  • 1/4 cup shredded Romano or Parmesan cheese
In a blender container or food processor bowl place tomatoes and garlic. Cover and blend or process until smooth. Transfer to a large saucepan. Add broth, salt, and pepper. Bring to boiling.
Add ravioli; return to boiling. Reduce heat; cover and simmer for 6 to 8 minutes or until pasta is just tender, stirring gently once or twice. Stir in basil and parsley. Spoon onto plates; sprinkle with cheese. Makes 2 servings.
