Salmon Shortcakes

Make these fun salmon and biscuit sandwiches when you need dinner fast.

Ingredients

1 recipeHerbed Mayonnaise (see recipe below)see savings

1 14-3/4-ounce cansalmon, drained, flaked, and skin and bones removedsee savings

1egg, beatensee savings

-
2 tablespoonsmayonnaise or salad dressingsee savings

-
3/4 cupsoft bread crumbssee savings

-
1green onion, choppedsee savings

-
1 tablespoonmargarine or buttersee savings

-
4purchased buttermilk biscuits or one 10.8-oz. pkg. refrigerated large flaky biscuits, bakedsee savings

Directions
1.
Prepare Herbed Mayonnaise; set aside.
2.
In a bowl combine salmon, egg, mayonnaise, bread crumbs, and green onion. Form the mixture into eight patties. In a large skillet melt margarine or butter over medium heat. Cook patties 9 minutes or until brown, turning once.
3.
Split biscuits. (You may want to warm already baked biscuits slightly in the oven or microwave before serving.) Top one side of biscuit with 2 salmon patties; spoon on Herbed Mayonnaise. Makes 4 servings.
Herbed Mayonnaise
In a bowl stir together 1/4 cup mayonnaise, 1 tablespoon snipped fresh dill weed, and 1 tablespoon milk. Add additional milk to make of drizzling consistency. Makes about 1/3 cup.
