    tuna in olive oil, lightly drained and flaked

    large hard-boiled eggs

    medium tomato, quarted lengthwise

    green beans, cooked until tender-crisp

    small red onion, thinly sliced (about 1/3-cup)

    oil-cured black olives cut into slivers

    anchovies, optional

Directions
1.
In a large bowl, whisk together vinegar and mustard. Slowly drizzle in oil and whisk until slightly thickened. Season to taste with salt and pepper.
2.
Arrange tuna, eggs, tomato, cooked green beans (steam or in microwave for 1-2 minutes till tender-crisp) and onion on 2 plates.
3.
Drizzle with dressing; top with olives and anchovies, if using. Enjoy!
