Ingredients
  • 2 1/2 pounds new potatoes, cut into 1-inch pieces
  • 1 onion, cut into quarters and separated
  • 1/4 cup olive oil
  • 1 1/2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
Directions
1. 
Preheat oven to 400 degrees.

Combine all ingredients in a 13 x 9 x 2-inch baking pan, and toss gently to coat potatoes.
3. 
Bake for 1 hour, stirring every 10 minutes.
