Ingredients

2-1/2 pounds new potatoes, cut into 1-inch pieces

1 onion, cut into quarters and separated

1/4 cup olive oil

1-1/2 teaspoons dried oregano

1 teaspoon salt

Directions

Preheat oven to 400 degrees.

Combine all ingredients in a 13-x-9-x-2-inch baking pan, and toss gently to coat potatoes.

Bake for 1 hour, stirring every 10 minutes.
