Roast Chicken Salad Sandwich

Fresh and on-trend chicken salad sandwich features a quick-to-fix rotisserie roasted chicken salad with toasted almonds and diced Granny Smith apples served on hearty whole grain bread with fresh field greens.

  • 2 1/2 cups diced rotisserie roasted chicken breast meat
  • 2/3 cup diced celery
  • 2/3 cup diced Granny Smith apples
  • 1/4 cup slivered almonds, toasted
  • 1/2 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 slices whole grain bread
  • 2 cups packaged spring mix lettuce blend
Combine store-bought rotisserie-roasted chicken, celery, apples, almonds and mayonnaise in bowl; mix well. Season with the salt and pepper and mix to blend.
Spread chicken salad evenly on 4 slices of bread, top with lettuce and close with top halves of sandwiches.
