Rice Pilaf with Oranges and Walnuts
Fresh fruit and mushrooms add color and flavor to the rice in this easy side dish. It pairs well with chicken, turkey, or fish.

Ingredients

1-1/2 cups sliced mushrooms (4 ounces)

1 cup sliced celery (2 stalks)

1 cup finely chopped onion (1 large)

1 tablespoon vegetable oil

1 14-ounce can chicken broth

2/3 cup water

1 6-ounce package long grain and wild rice mix

2 medium oranges, peeled and sectioned, or one 11-ounce can mandarin orange sections, drained

1/2 cup chopped toasted walnuts
Directions

In a large saucepan, cook mushrooms, celery, and onion in hot oil about 5 minutes or until tender. Add broth and water; bring to boiling. Stir in rice mix and seasoning packet; reduce heat. Simmer, covered, for 25 to 30 minutes or until rice is tender. Remove from heat. Gently stir in orange sections and walnuts. Makes 6 servings.
