Ingredients
  • 8   servings Atkins Cuisine Bread (see recipe)
  • 2   tablespoons unsalted butter, softened
  • 1/2  cup coleslaw
  • 1/2  pound corned beef, sliced
  • 1/4  pound Jarlsburg cheese, sliced
  • 2   tablespoons Russian dressing (see recipe)
Atkins Cuisine Bread
  • 2   cups and 1 tablespoon Atkins Cuisine All-Purpose Baking Mix
  • 1 1/2  teaspoons baking poweder
  • 1/2  teaspoon salt
  • 1   packet (1 g) granular sugar substitute (sucralose)
  • 1 1/8  cups cold water
  • 3   tablespoons vegetable oil
  •  Non-stick vegetable oil spray

Atkins Russian Dressing
  • 3/4  cup mayonnaise
  • 1/4  cup low-carb (no-added-sugar) ketchup
  • 1   tablespoon finely chopped onion
  • 1   tablespoon chopped fresh parsley leaves
  • 2   teaspoons prepared horseradish
  • 1   teaspoon Worcestershire sauce

Directions
1. 
Butter each slice of bread.
2. 
For each sandwich: On unbuttered side of bread spread 2 tablespoons coleslaw, 3 slices corned beef, 1 slice cheese and 1-1/2 teaspoons Russian Dressing (see recipe). Place second slice of bread, butter side up, on dressing. Repeat to make total of 4 sandwiches.
3. 
On griddle, cook sandwiches, tented with foil, 6 minutes, turning once, until toasted golden. Serve hot.
Note:
1. 
This recipe using the Atkins Russian Dressing (see recipe), which can be made up to 3 days before and stored in an air tight container. This sandwich would be delicious on a rye bread if you can find one that is low in carbs. Otherwise, Atkins Cuisine bread (see recipe) gives 1.5g NC per serving.
