Directions
1.
Butter each slice of bread.
2.
For each sandwich: On unbuttered side of bread spread 2 tablespoons coleslaw, 3 slices corned beef, 1 slice cheese and 1 1/2 teaspoons Russian Dressing (see recipe). Place second slice of bread, butter side up, on dressing. Repeat to make total of 4 sandwiches.
3.
On griddle, cook sandwiches, tented with foil, 6 minutes, turning once, until toasted golden. Serve hot.

Note:
This recipe using the Atkins Russian Dressing (see recipe), which can be made up to 3 days before and stored in an air tight container. This sandwich would be delicious on a rye bread if you can find one that is low in carbs. Otherwise, Atkins Cuisine bread (see recipe) gives 1.5g NC per serving.

Atkins Russian Dressing:
Servings: 8 / Prep Time: 10 Minutes / Total Time: 10 Minutes
Combine 3/4 Cup mayonnaise; 1/4 Cup low-carb (no-added-sugar) ketchup; 1 Tablespoon finely chopped onion; 1 Tablespoon chopped fresh parsley leaves; 2 Teaspoons prepared horseradish; and 1 Teaspoon Worcestershire sauce in a bowl, mixing well. Use immediately or refrigerate in an airtight container for up to 3 days.
Nutritional Information for Atkins Russian Dressing: Net Carbs: 1.0 grams, Fiber: 0 grams, Protein: 0 grams, Fat: 16.5 grams, Calories: 155.

Atkins Cuisine Bread:
Servings: 23 /Prep Time: 20 Minutes / Total Time: 80 Minutes
Pre-heat oven to 350 degrees F. Blend 2 Cups and 1 Tablespoon of Atkins Cuisine All Purpose Baking Mix; 1-1/2 teaspoons baking powder; 1/2 teaspoon salt; and 1 packet (1g) of granular sugar substitute (sucralose) in a large mixing bowl. Add 1-1/8 cups cold water and 3 tablespoons vegetable oil with a spoon or spatula and combine into a dough. With a spatula, take the dough out of the bowl and place on a clean surface lightly coated with non-stick vegetable oil spray. Coat hands with non-stick vegetable oil spray and gently shape the dough into a long roll shape. Carefully place the dough into a bread pan coated with non-stick vegetable oil spray. Bake at 350 degrees F for 60 minutes or until done. Place on a wire rack and allow to completely cool before slicing.

Note:
Recipe makes 23 slices, each slice is 1.5 net carbs.
