    Atkins Cuisine Bread (see recipe)

    unsalted butter, softened

    coleslaw
  • 1/2  pound 
    corned beef, sliced
  • 1/4  pound 
    Jarlsburg cheese, sliced
  • 2   tablespoons 
    Russian dressing (see recipe)
Atkins Cuisine Bread
  • 2   cups 
    and 1 tablespoon Atkins Cuisine All-Purpose Baking Mix
  • 1 1/2  teaspoons 
    baking poweder
  • 1/2  teaspoon 
    salt
  • 1   
    packet (1 g) granular sugar substitute (sucralose)
  • 1 1/8  cups 
    cold water
  • 3   tablespoons 
    vegetable oil
  •  
    Non-stick vegetable oil spray

Atkins Russian Dressing
  • 3/4  cup 
    mayonnaise
  • 1/4  cup 
    low-carb (no-added-sugar) ketchup
  • 1   tablespoon 
    finely chopped onion
  • 1   tablespoon 
    chopped fresh parsley leaves
  • 2   teaspoons 
    prepared horseradish
  • 1   teaspoon 
    Worcestershire sauce

Directions
1.
Butter each slice of bread.
2.
For each sandwich: On unbuttered side of bread spread 2 tablespoons coleslaw, 3 slices corned beef, 1 slice cheese and 1-1/2 teaspoons Russian Dressing (see recipe). Place second slice of bread, butter side up, on dressing. Repeat to make total of 4 sandwiches.

On griddle, cook sandwiches, tented with foil, 6 minutes, turning once, until toasted golden. Serve hot.
Note:

1.
This recipe using the Atkins Russian Dressing (see recipe), which can be made up to 3 days before and stored in an air tight container. This sandwich would be delicious on a rye bread if you can find one that is low in carbs. Otherwise, Atkins Cuisine bread (see recipe) gives 1.5g NC per serving.
Atkins Cuisine Bread

Pre-heat oven to 350 degrees F. Blend 2 Cups and 1 Tablespoon of Atkins Cuisine All Purpose Baking Mix; 1-1/2 teaspoons baking powder; 1/2 teaspoon salt; and 1 packet (1g) of granular sugar substitute (sucralose) in a large mixing bowl. Add 1-1/8 cups cold water and 3 tablespoons vegetable oil with a spoon or spatula and combine into a dough. With a spatula, take the dough out of the bowl and place on a clean surface lightly coated with non-stick vegetable oil spray. Coat hands with non-stick vegetable oil spray and gently shape the dough into a long roll shape. Carefully place the dough into a bread pan coated with non-stick vegetable oil spray. Bake at 350 degrees F for 60 minutes or until done. Place on a wire rack and allow to completely cool before slicing.

Recipe makes 23 slices, each slice is 1.5 net carbs.

Atkins Russian Dressing

Combine mayonnaise, ketchup, onion, parsley, horseradish, and Worcestershire sauce in a bowl, mixing well. Use immediately or refrigerate in an airtight container for up to 3 days.
