Reduced Fat Balsamic Vinaigrette
Recipe from Agave In The Raw«

Perfect on Romaine lettuce and spinach salad, this creamy dressing is delicious on steamed broccoli, too. Dairy-free and nearly oil-free, its thick body comes from apple sauce and pureed raisins.

Directions
1.
Place the raisins in a bowl. Add the boiling water and soak until the raisins are very soft, 20-30 minutes. Drain and place the soaked raisins in a blender.
2.
Add the vinegar, garlic, mustard, apple sauce, Agave In The Raw, and oil to the blender and whirl until the dressing is creamy and smooth. Season the dressing to taste with salt and pepper. Let the dressing sit for 20 minutes to allow flavors to meld. This dressing keeps, tightly covered in the refrigerator, for 3 days.
