Low rating was accidental; would have given it a 3 1/2-4. I think there is an error in the amount of bread flour; I think possibly it should be 1 cup for each type of bread to start. You can make a double batch of the rye dough, pull out half, and knead the cocoa powder and espresso powder into the remaining half (the doughs are identical except for those two ingredients). Not sure if that's possible by hand, but it worked well with a dough hook & stand mixer.
