Quick Turkey Florentine

This 20-minute recipe takes the fixings of a Florentine-style dish--spinach, mushrooms, and white wine--and tosses them with ground turkey in a skillet.

1 smallonion, finely choppedsee savings

6 ouncesmushrooms, sliced (about 1 cup)see savings

6 ouncesfresh spinach, washed and chopped (about 3 cups)see savings

1/4 teaspoonred-pepper flakessee savings

1/2 cupchicken brothsee savings

1/4 cupdry white winesee savings

2 tablespoonsDijon-style mustardsee savings

8 ouncesshredded mozzarellasee savings

1/4 teaspoonsaltsee savings

1/4 teaspoonpeppersee savings

Directions
1.
Heat butter In large skillet over medium-high heat. Add turkey and onion, breaking up turkey; cook until onions are softened and turkey is no longer pink, 5 to 7 minutes.
2.
Add mushrooms, spinach, pepper flakes and broth; cook 5 minutes. Add wine and mustard; increase heat to high and cook until reduced and thickened, about 5 minutes. Remove skillet from heat. Stir in mozzarella, salt and pepper. Makes 3 cups.
