Quick Shrimp Paella
This one-dish meal cooks on top of the stove. It goes together quickly and it's full of flavor thanks to spicy sausage and a packaged rice mix.

Ingredients

2 tablespoons olive oil

1 teaspoon jarred chopped garlic

1 pound cleaned medium shrimp

1 cup frozen chopped onion
-
2 links smoked spicy beef sausages (6 ounces total), 1/4-inch slices

1 box (6.8 ounces) Spanish seasoned rice and vermicelli mix

1 can (14.5 ounces) stewed tomatoes

1 cup frozen peas
-
1 can (14 ounces) marinated artichoke hearts, drained, quartered
Directions

Heat oil in 10-inch skillet over medium-high heat. Add garlic and shrimp; saute 3 minutes, until just cooked. With slotted spoon, remove shrimp to bowl. Cover to keep warm.

In same skillet, saute onion, sausage, 3 minutes. Add rice mix without seasoning pack; cook rice, 3 minutes. Add 2 cups water, tomatoes, peas, seasoning packet. Simmer, covered, 20 minutes, until tender. Add shrimp and artichoke; heat through.
