Pumpkin Fritters
2 dozen
  • 1 16 ounce can pumpkin
  • 3/4 cup Sugar In The Raw®, divided
  • 4 eggs
  • 1 small onion, minced
  • 1 tablespoon butter, softened
  • 3/4 cup flour
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • Ground cinnamon

This recipe makes the perfect pumpkin pie even more luscious by using heavy cream and adding a pinch of black pepper a little extra spunk.

In a medium mixing bowl, combine pumpkin and 1/2 cup Sugar In The Raw. Add eggs one at a time beating thoroughly. Stir in onion and softened butter. Slowly add flour and salt; blend well. Set batter aside.
Heat the oil in a small, deep sided skillet. When oil is hot, drop spoonfuls of the fritter batter into oil and heat about 2 minutes on each side until golden brown. Drain fritters on paper towel and sprinkle immediately with the remaining Sugar In The Raw and cinnamon.
