  • 1  cup  finely shredded Swiss, cheddar, or Monterey Jack cheese (4 ounces)On Sale

Directions

Grease a 10-inch ovenproof skillet with shortening. Place in the oven. Preheat the oven to 400 degree F (about 10 minutes). Meanwhile, in a medium mixing bowl beat together the eggs, all-purpose flour, and milk until smooth. Pour into the hot skillet.

Bake in the 400 degree F oven about 20 minutes or until pancake is puffed and golden. Sprinkle with cheese, then bacon pieces. Cut into wedges to serve. Makes 4 servings.
