Ingredients

    beef ribeye roast, small end, well trimmed

    arugula leaves, as garnish

Directions
1.
Heat oven to 350 degrees F.

Place roast, fat side up, on rack in shallow roasting pan. Insert ovenproof meat thermometer in thickest part. Roast 1-1/2 hours for medium rare (135 degrees F. on thermometer), 1-3/4 to 2 hours for medium (150 degrees F ).

Remove from oven; let roast rest 15 minutes (to allow juices to redistribute). Temperature of roast will rise an additional 10 degrees F. Add 1/2 cup water to roasting pan, and scrape up dried-on bits with a wooden spoon; strain.
4.
Serve this alongside the sliced beef. Garnish with 2 arugula leaves.
