How to Make Oven Roasted Prime Rib

Learning how to make oven-cooked prime rib isn't difficult at all and can be a great addition to a holiday meal. It can easily be served with roasted potatoes and carrots cooked in the same pan and basted with the drippings.

Directions
1.
Heat oven to 350 degrees F.
2.
Place roast, fat side up, on rack in shallow roasting pan. Insert ovenproof meat thermometer in thickest part. Roast 1-1/2 hours for medium rare (135 degrees F. on thermometer), 1-3/4 to 2 hours for medium (150 degrees F ).
3.
Remove from oven; let roast rest 15 minutes (to allow juices to redistribute). Temperature of roast will rise an additional 10 degrees F. Add 1/2 cup water to roasting pan, and scrape up dried-on bits with a wooden spoon; strain.
4.
Serve this alongside the sliced beef. Garnish with 2 arugula leaves.
