Pork with Tropical Sauce

Ingredients

4 boneless pork top loin chops, cut 1 inch thick

Salt and ground black pepper

2 teaspoons olive oil

2 teaspoons curry powder

1 teaspoon ground ginger

1/4 teaspoon ground cinnamon

1 cup snipped assorted dried tropical fruit (such as mango, papaya, and pineapple) or tropical blend mixed dried fruit bits

1/2 cup orange juice

1 tablespoon cider vinegar

2 tablespoons pineapple preserves
Directions

Preheat broiler (if broiler has settings, use High). Sprinkle chops with salt and pepper. Brush chops with oil. In a bowl stir together curry, ginger, and cinnamon. Remove and set aside 1 teaspoon of the spice mixture. Rub remaining mixture over both sides of chops.

Place chops on an unheated rack of a broiler pan. Broil 4 inches from heat for 9 to 11 minutes, turning once, or until an instant-read thermometer inserted in pork chops registers 160 degrees F.

Meanwhile, for sauce, in a small saucepan stir together fruit, orange juice, vinegar, and reserved spice mixture. Bring to boiling. Stir in preserves. Remove from heat and let stand, covered, for 5 minutes. Serve sauce over pork. Makes 4 servings.
