Pork with Raisin Sauce
This low-fat pork dinner is flavored by the homemade fruit sauce. You could also serve the sauce on chicken.

Ingredients

1 1- to 1-1/4-pound peppercorn pork tenderloin

Creole or Cajun seasoning

1 cup raisins

1 teaspoon finely shredded orange peel

1/3 cup orange juice

1 teaspoon finely shredded lemon peel

3 tablespoons lemon juice

1/4 cup white wine vinegar

1/4 cup sugar

1 tablespoon dry mustard

1 tablespoon Worcestershire sauce

1/4 teaspoon ground allspice

1/4 teaspoon ground ginger

1 2-inch stick cinnamon
Directions

Preheat oven to 425 degree F. Place pork on a rack in a shallow roasting pan. Sprinkle lightly with seasoning. Roast, uncovered, for 30 to 35 minutes or until an instant-read thermometer inserted in center registers 155 degree F. Remove from oven. Cover and let stand 5 minutes until thermometer registers 160 degree F.

Meanwhile, for sauce, in a medium saucepan combine raisins, 1/3 cup water, orange peel and juice, lemon peel and juice, vinegar, sugar, mustard, Worcestershire, and spices. Bring to boiling; reduce heat. Simmer, uncovered, for 8 to 10 minutes or until desired consistency. Remove cinnamon stick. Slice pork; serve sauce with pork. Makes 4 servings.
