Pork Tostadas

Fresh pork tenderloin tostadas using only five ingredients.

  • 1 pound Smithfield pork tenderloin
  • 8 corn tortillas, warmed in the microwave
  • 1 bunch cilantro, chopped
  • 2 Limes, quartered
  • 1 cup prepared salsa verde
  • Salt and pepper
Spray outdoor grill or grill pan with nonstick cooking spray and heat to medium high. Rub Smithfield tenderloin liberally with salt and pepper and place on a hot grill. Grill approximately 8 minutes per side until an internal temperature of 160 degrees F is reached. Remove from heat and allow to rest 10 minutes before slicing.
Warm corn tortillas in a microwave by stacking on a microwave safe plate and covering with plastic wrap. Microwave on high for 10-20 seconds. For a crispy tostada, pan fry your corn tortillas in vegetable oil.
To assemble tostadas, place sliced tenderloin on top of warm tortillas and top with salsa verde. Sprinkle with fresh cilantro and squeeze a lime quarter over each.
