Directions
1.
Cut pork about 1/2-inch thick. Sprinkle pork on all sides with the seasoning. Heat oil in a large heavy skillet over medium-high heat. Add the pork and cook, turning once, until pork is browned, about 1-1/2 minutes on each side.

Place tenderloin in the rolls, top with lettuce, tomatoes, and sauce of your choice. Yogurt-Lime Sauce, Goat Cheese-Basil Sauce, or Spicy Avocado Sauce (see recipes below).

Yogurt-Lime Sauce:
Stir together 1/2 cup plain low-fat Greek yogurt; 1/2 teaspoon lime zest, grated; 2 teaspoons lime juice; and 1 tablespoon fresh cilantro, chopped, in a small bowl. Makes 1/2 cup.

Goat Cheese-Basil Sauce:
Stir together 4 ounces soft goat cheese, at room temperature (1/2 cup); 1 tablespoon fresh basil, chopped; 1 small clove garlic, minced; 1 teaspoon lemon juice; and a pinch black pepper in a small bowl. Makes 1/2 cup.

Spicy Avocado Sauce:
Place avocado in a small bowl and mash with a fork or potato masher. Add 1 small ripe avocado, halved, pitted, and peeled; 1 tablespoon jalapeno, minced, including seeds; 1 tablespoon lime juice; and 2 teaspoons fresh cilantro, minced; stir until well mixed. Makes 1/2 cup + 1 tablespoon.
