  • 4    pork loin chops, cut 1 1/4 inches thick (about 3 pounds)On Sale
  • 1  teaspoon  Jamaican jerk or Cajun seasoningOn Sale
  • 1/8  teaspoon  ground black pepperOn Sale
  • 1/2  of a 15-ounce can  black beans, rinsed and drained (3/4 cup)On Sale
  • 2/3  cup  corn relishOn Sale
  • 1 1/2  teaspoons  lime juiceOn Sale
  • 1/4  teaspoon  ground cuminOn Sale
  •     Lime wedgesOn Sale

Directions

Preheat broiler. Trim fat from meat. Sprinkle seasoning and pepper onto both sides of chops. Place pork chops on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat for 16 to 20 minutes or until done (160 degrees F ), turning meat over halfway through broiling.

Meanwhile, for salsa, in a small bowl combine black beans, corn relish, lime juice, and cumin. Serve chops with salsa. Pass lime wedges to squeeze over chops and salsa.
