Pork Chops with Black Bean Salsa
Make a simple bean salsa while the seasoned pork cooks. You'll have a complete meal in minutes.

Ingredients

4 pork loin chops, cut 1 1/4 inches thick (about 3 pounds)

1 teaspoon Jamaican jerk or Cajun seasoning

1/8 teaspoon ground black pepper

1/2 of a 15-ounce can black beans, rinsed and drained (3/4 cup)

2/3 cup corn relish
-
1 1/2 teaspoons lime juice
-
1/4 teaspoon ground cumin

Lime wedges
Directions

Preheat broiler. Trim fat from meat. Sprinkle seasoning and pepper onto both sides of chops. Place pork chops on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat for 16 to 20 minutes or until done (160 degrees F ), turning meat over halfway through broiling.

Meanwhile, for salsa, in a small bowl combine black beans, corn relish, lime juice, and cumin. Serve chops with salsa. Pass lime wedges to squeeze over chops and salsa.
