Pork and Potatoes with Tomato Relish

Add pizzazz to your weeknight dinner with this recipe of pork, onion, potatoes, and tomatoes.

Ingredients

1 1 lb. 8 oz.-pkg.refrigerated mashed potatoessee savings

4boneless pork loin chops, 3/4-inches thicksee savings

2 Tbsp.olive or cooking oilsee savings

1 largered onion, quartered and sliced (2 cups)see savings

2tomatoes, cut into thin wedgessee savings

1/4 cupbottled red wine vinaigrette salad dressingsee savings

Directions
1.
Prepare mashed potatoes according to microwave package directions.

Meanwhile, season chops with salt and pepper. In 12-inch skillet heat oil over medium-high heat. Add pork chops; cook 3 minutes. Turn, add onion. Cook 10 minutes more or until chops are done (160F), turning chops to brown evenly. Stirring onion occasionally. Transfer chops to serving plates.

Add tomatoes and vinaigrette to onion; cook and stir 1 minute more. Serve chops with mashed potatoes. Makes 4 servings.
