Pickled Red Onions for Quesadillas

Serve these sweet and tangy onions as a side dish to beef or pork. Or use them to top a sandwich or burger.

Ingredients

1 cupsugarsee savings

1 cupred-wine vinegarsee savings

4 cupssliced red onionsee savings

Directions
1.
Combine sugar and vinegar in a small saucepan. Simmer mixture over moderately high heat, stirring until sugar dissolves, about 3 minutes. Remove from heat and stir in onions.
2.
Let onions cool, stirring occasionally to room temperature. Serve or keep chilled, covered. Makes about 2 cups.
