Penne with Broccoli, Bacon and Garlic
Lean Canadian bacon adds smoky flavor to this low-fat main dish recipe. To save prep time, the broccoli and pasta cook in the same pot.

Ingredients

1 box (1 pound) penne or your favorite short shaped pasta

1 head broccoli, cut into 1-inch flowerets, stems peeled and cut into 1/4-inch-thick slices OR: 1 bag (about 1 pound) fresh broccoli flowerets

2 tablespoons olive oil

1/2 pound Canadian bacon, diced

1 medium-size onion, halved and sliced crosswise

2 cloves garlic, sliced

1/2 teaspoon red-pepper flakes

1 can (14.5 ounces) chicken broth

1/4 teaspoon salt

1/4 teaspoon black pepper

1 medium-size ripe red tomato, cored and diced

1/3 cup grated Parmesan cheese
Directions

In large deep pot of lightly salted water, cook penne until al dente, firm yet tender, following package directions. For last 4 minutes of cooking, add broccoli. Drain.

Meanwhile, in large nonstick skillet, heat oil over medium-high heat. Add bacon, onion and garlic; saute 3 minutes. Lower heat to medium; add pepper flakes; cook until onion is softened, about 4 minutes. Stir in broth, salt and pepper; heat through. Remove from heat; stir in tomato.

Transfer hot pasta and broccoli to large serving bowl. Add bacon mixture from skillet; toss to combine. Stir in Parmesan, and serve immediately. Makes 8 servings.
