Pecan Crust Chicken

  • 2 tablespoons
    orange marmalade

  • 1 cup
    finely chopped pecans

    all-purpose flour

  • skinless, boneless chicken breast halves (1-1/4 lb. total)

    cooking oil

Directions
1.
In a small bowl stir together orange marmalade and maple syrup; set aside. In a shallow dish combine the pecans, flour, and salt. Brush marmalade mixture on both sides of chicken breast halves. Dip into pecan mixture to coat, pressing pecan mixture into chicken, if necessary.

In a 12-inch skillet heat cooking oil and butter over medium heat until the butter melts and the mixture begins to bubble. Add chicken breasts and cook for 6 minutes. Turn chicken. Cook for 6 to 9 minutes more or until golden brown and no longer pink in center (170 degree F). Watch closely and reduce heat if chicken browns too quickly. Makes 4 servings.
