  • 1  16-oz. package
    frozen unsweetened peach slices, partially thawed

    dark rum or peach nectar

    light- or dark-colored corn syrup (optional)

    peanut brittle, crushed (about 1 cup)

Directions
1.
For sauce: In a food processor or blender, combine peach slices, rum or peach nectar, corn syrup (if using) and almond extract. Cover and process or blend until almost smooth.
2.
To serve, scoop ice cream into 8 chilled dessert dishes or parfait glasses. Pour peach sauce over ice cream. Top with crushed peanut brittle. If you like, serve with additional whole pieces of peanut brittle on the side. Makes 8 servings.
