Peach Fizz

Ingredients
1 cup frozen peach slices
1 teaspoon fruit pectin
2 tablespoons bar sugar
1 750-milliliter bottle Champagne, chilled

Directions
1. Combine frozen peaches, fruit pectin, and bar sugar in a blender. Process until you have a smooth, frothy puree, about 1 minute. Place mixture in a pressurized whipped cream dispenser* and shake as directed. Dispense frothy puree in the bottom of each glass. Pour Champagne over the top of the frothy puree (as the champagne hits the puree, it will bubble).

Find pressurized whipped cream dispensers at cooking stores.
