Pasta Spinach Salad
A bed of spinach cradles the mixture of pasta, vegetables, and feta in this easy salad recipe. It's perfect for a potluck or cookout.

Ingredients

6 ounces dried whole wheat or regular penne or cavatelli pasta

2 medium tomatoes, peeled, seeded, and chopped

1/2 cup crumbled feta cheese (2 ounces)

1/3 cup bottled reduced-calorie Italian salad dressing

1/4 cup sliced green onions
-
2 tablespoons sliced pitted ripe olives

6 cups torn fresh spinach

Cracked black pepper
Directions

Cook pasta according to package directions; drain. Rinse pasta with cold water; drain. In a large bowl, combine the pasta, tomatoes, feta cheese, salad dressing, green onions, and olives. Cover and chill in the refrigerator for at least 2 hours or up to 24 hours.

To serve, arrange spinach on a large serving platter; spoon pasta mixture over spinach. Sprinkle with cracked pepper.
