Papaya Seed Vinaigrette

Toss this light homemade dressing with any combination of greens, avocado, cucumber, and sweet peppers.

1 tablespoonwhole mustard seedssee savings

1/2 of aripe papaya, peeled but not seeded, and cut upsee savings

1green onion, cut upsee savings

1/4 cupwhite wine vinegarsee savings

1 tablespoonhoneysee savings

2 teaspoonsDijon-style mustardsee savings

2 teaspoonstoasted sesame oilsee savings

Directions
1.
Place mustard seeds in a small skillet over medium heat and shake the pan about 2 or 3 minutes or until the seeds start to pop. Place in a blender container or food processor bowl. Add papaya with seeds and green onion. Add vinegar, honey, mustard, oil, 1 tablespoon water, and 1/2 teaspoon salt. Cover and blend until nearly smooth. Makes 1-1/4 cups.
