  • 1/4  cup  chopped papaya or mangoOn Sale
  • 3  tablespoons  pitted ripe olives, coarsely choppedOn Sale
  • 2  tablespoons  snipped fresh chivesOn Sale
  • 2  tablespoons  balsamic vinegarOn Sale
  • 1  tablespoon  olive oilOn Sale
  • 3  tablespoons  slivered almonds, toastedOn Sale
  •     Lettuce leavesOn Sale
  • 1  to 2  papayas, seeded and cut into wedgesOn Sale

Directions
1.
In a large bowl combine cooked rice, papaya, olives, chives, vinegar, and oil; toss to combine.

Serve immediately or cover and chill for up to 6 hours.

Just before serving, stir in almonds. Serve on lettuce-lined plates with papaya wedges.
