Olive Relish

This chunky relish with a salty snap of capers is ready in minutes. It adds peppy flavor to fish or chicken dishes and is amazing on sandwiches.

  • 3/4 cup whole pimiento-stuffed green olives, coarsely chopped
  • 1/3 cup chopped onion
  • 1/4 cup snipped fresh Italian (flat-leaf) parsley
  • 2 tablespoons capers, drained
  • 1 small jalapeno pepper, seeded and chopped
  • 1 tablespoon white wine vinegar
In bowl combine all ingredients. Season to taste with ground black pepper. Makes 1-1/3 cups.
