    chopped black olives

    chopped sun-dried tomatoes in oil, drained

    crushed red-pepper flakes

    Mama Lupe'sŪ 7-inch low-carb tortillas

    arugula leaves

Directions
1.
Mix eggs, mayonnaise, olive oil, black olives, sun-dried tomatoes and red-pepper flakes. Season to taste with salt and pepper.
2.
Warm tortillas between damp paper towels in microwave. Spread egg mixture on tortillas, leaving a border. Top with arugula leaves.
3.
Roll up tortillas. Enjoy!
