Directions

In a large skillet, heat olive oil over medium-high heat. Add garlic and shallots; cook until tender. Remove from heat.

In a Dutch oven, combine beans, potatoes, reserved cooked garlic and shallots, chicken broth, oregano, salt, and pepper. Cook, covered, until tender, approximately 30 minutes.
