Nutty Shortbread

The warm, gooey nut mixture that tops this shortbread is also fantastic over ice cream.

  • 2 tablespoons butter
  • 1/4 cup packed brown sugar
  • 2 tablespoons light-colored corn syrup
  • 3/4 cup lightly salted mixed nuts
  • 1/4 teaspoon smoked chipotle powder or smoked paprika (optional)
  • 1/2 teaspoon vanilla
  • 8 2-3/4x1-inch purchased shortbread cookies, cut in half crosswise
In a heavy small saucepan combine butter, brown sugar, and corn syrup. Bring to boiling over medium heat. Remove from heat. Stir in mixed nuts, chipotle powder, and vanilla; set aside to cool 15 minutes.
Spoon warm nut mixture on top of cookies. Let stand at least 15 minutes before serving. Makes 16 servings.
