Nutty Cheese-Topped Figs
When you have a craving for a bit of something sweet, try one of these bite-size treats. The combo of figs, nuts, and cream cheese will satisfy you--at only 3 g carbs per bite.

Ingredients

10 dried Calimyrna (light) figs*

1/4 cup light tub-style cream cheese

1-1/2 teaspoons finely shredded lemon peel

10 Brazil nuts or toasted whole almonds, or 20 hazelnuts

2 teaspoons honey (optional)
Directions

If necessary, pull on stem of each fig while holding on to the other side and gently pull to reshape. Using a sharp knife, trim off stems. Cut figs in half horizontally. Spoon cream cheese into a small resealable plastic bag. Snip off one corner of the bag. Pipe a small amount of cream cheese onto the center of each fig half. Sprinkle with lemon peel.

If using Brazil nuts or almonds, cut each nut in half crosswise. Place a nut half or whole hazelnut on top of cream cheese on each fig half. Transfer to a serving plate. If desired, drizzle with honey. Serve immediately or cover and chill for up to 24 hours. Makes 20 bites (20 servings).

Calimyrna and Black Mission figs are the two most common varieties of dried figs you'll find at the supermarket. Calimyrna have a greenish yellow skin, a pale pink interior, and a nutty flavor. Black Mission are dark purple with a pink interior and a full, fruity flavor. If you can't find Calimyrna figs, substitute Black Mission instead.
