  • 1  pound
    broccoli, trimmed and cut into 2-inch pieces

    butter

    finely shredded orange peel (set aside)

    fresh orange juice

    salt

  • 3  tablespoons
    chopped walnuts, pine nuts, or pecans, toasted

Directions

If desired, cut broccoli stem pieces lengthwise in half. To steam, place a vegetable steamer basket in a 3-quart saucepan. Add water to reach just below the bottom of the basket. Bring water to boiling. Add broccoli to steamer basket. Cover and reduce heat. Steam for 8 to 10 minutes or just until broccoli stems are tender. Transfer broccoli to a serving dish.

Meanwhile, in 8-inch skillet melt butter over medium-high heat; cook and stir butter for 3 to 4 minutes or until medium brown. Carefully add orange juice and cook for 10 seconds. Remove from heat; stir in orange peel and salt. Pour over broccoli. Sprinkle with walnuts. If desired, garnish with orange wedges. Makes 6 servings.
